I couldn’t wait to scarf these down. You know I’m an oatmeal girl. Well these little beauties made my life so much easier. No dishes to wash! It’s almost impossible to find something this quick and easy and be this healthy at the same time. Trust me. I loved every single meal. They were great after a good workout. And they kept my tummy nice and full. Love that feeling. Know what I love more? The ingredient’s list. Check it out:

Best Ever Vegetarian Chili

This is by far THE best chili I have ever made. I used ingredients that I had in my kitchen. No trip to the grocery store required, which makes it even better.

I gathered up everything that I wanted:
Meatless veggie crumbles
Jar of salsa (I used the salsa I made a couple of months ago)
Frozen corn
Black beans
Vegetable broth
Tomato soup

I decided to cook up some rice while I was chopping my green and red pepper, onion, and garlic. I use long grain brown rice.

Saute veggies with crumbles. Do you like my reindeer spatula? Jealous?

Once the veggies are just about cooked, add a cup or two of broth. I didn’t measure anything. Just eyeball it. You want to cover the veggies so they cook all the way through. Once they are cooked add the beans, tomato soup, corn, and salsa.

Spice it up to your liking. I let mine simmer for two hours. I also threw a sweet potato in the oven. Love this combo!

We got the beets.

Why did I wake up craving pickled beets today? I didn’t have them for breakfast, but I did incorporate them in my lunch and dinner. My mom gives me jars of her pickled beets thankfully, so I didn’t have to shop or do any work.

I was already thinking last night that today was going to be a rest day. It was on the shedule, but I don’t take them if I don’t want or need to. I am glad I did. Lifting is getting more intense with Les Mills and I greatly appreciated the extra sleepy time. In fact. I am looking forward to doing it again very soon.

I woke up , started my work computer, got ready, and had my shake for breakfast. Second breakfast (a couple hours later) was peanut butter oatmeal. Snack was greek yogurt. Then it was time for lunch. I had a giant baby green salad. Toppings: pecans, tomato, red onion, and avocado.

I snacked on some popcorn with Maddox this afternoon and had a green apple. I am either always eating or washing dishes. Why am I telling you everything I ate today? I have no idea. Maybe you need snack or meal ideas. There.

I wasn’t that hungry for supper, but I knew I wanted a sweet potato….and beets. Can you guess what I made? I chopped up a sweet potato and mixed a tablespoon of coconut oil, salt, and pepper with it. 400 degree oven for 40 minutes. House smelled super deliciously amazing.

Doesn’t this look good? This would be a great side for any meal. Or, how about Thanksgiving? Oooo. So, I wasn’t too creative tonight, but this is what I wanted. It made a pretty plate. And it was so freaking good. The sweetness of the potato and the pickled beets mixed wonderfully. Another hit in my books.

How colorful was your plate?

What’s your favorite day of the week? Mine is Thursday. So, today was a pretty fine day. Once again I had a billion packages at the post office. A billion=three in my world. One was for Maddox and the other two were for me. I have been playing the exchange game with Victoria’s Secret for a while now. I finally got the right leggings, so now I decided to send my bras back. I am turning into my grandma. She does the exact same thing. I think it’s her way of having to go shopping. So, I filled out my return slip and bagged it up. Opened up Maddox’s package and they sent the wrong stuff. Will I have to send this back too? Good grief. Wait! It gets better! The last package was my new winter coat. I had bought a new one last year and now I am swimming in it. Not a bad thing, just wasn’t expecting it. So now I ordered a Hydraulic coat from Burlington Coat Factory. I like it, but I don’t. It flares out at the waist and I look like a cupcake. Not the look I’m going for. Might have to send that back. I will see what Tyrell thinks when he gets home.

Let’s get to the good stuff. Food! It’s Vegan night at my house and I told you every Thursday I will post what I ate for dinner. So here we go!

I wanted to use up some beets so I decided to do a roasted root medley. I chopped up beets, a sweet potato, an onion, and a carrot. I then drizzled some olive oil and sprinkled some salt and pepper and mixed until the seasonings were distributed evenly.

These had to cook for about a half hour in a 450 degree oven. Tip: line your cookie sheet with tinfoil to save dishes. You know your veggies are done when you can poke through them nicely with a fork.

While these were roasting I steamed some green beans. I was planning on making green beans with garlic and diced tomatoes. Sounds interesting huh? I gave them a quick steam then I rinsed them in cold water to keep their bright green color and set aside.

Then I sauteed some onion in some olive oil. The recipe said to add three cloves of garlic, which means 6 to me. Then it was time to add my diced tomatoes. You can use canned, I did. I strained some of the juice out. I spiced this up to my liking (a ton of pepper), added the beans, heated up everything together, and done!

Doesn’t this look amazing and so colorful! I was a little nervous to try the green beans when I sat down to eat.
After my first bite I walked back to the kitchen, scooped up the rest that were left in the pot, and put them on my plate.
Then I mixed up everything. Are you a mixer upper? An enormous plate of colorful goodness was in front of me.What more could your body ask for?

Found some strange things…

Glad it’s Friday? Me too. It doesn’t feel like it though. I am liking this mini winter storm we had. I like staying in where it’s warm and cozy.

I accomplished alot after work today. I was off at 2 and I went straight up to my fun office (not my big girl JOB office) and gutted it, dusted it, and reorganized. Four hours later, I was finished. I love my fun office when it’s clean and organized. It’s the small things in life right?

You sure find stupid things when you’re cleaning though. I found a box that contained the wrapping paper used by my first boyfriend to wrap my Christmas present, my fifth grade diary ( oh the drama! ), and my emergency tornado kit when I was little. When it would storm bad enough, my mom and dad would make me and my brother go sit in the fruit room. I figured that I should bring a kit, you know, you never know what could happen. My kit was an old tin box that belonged to my great grandpa Jake. Inside was a necklace from my Grandma and Grandpa, address labels with my Grandpa Krein’s address, and a match. You. Just. Never. Know.

Workouts this week got off to a slow start. I still was up at 5, but I felt cruddy. I kept it low key with ab workouts and yoga. After transferring my illness to my husband, I feel great, and him…not so much. Sorry man.

Vegan Planet Recipe #2 Not-So-Dirty-Rice

It’s Thursday! That means it’s time to eat something new! I found a recipe last night that I just had to try. We grew up eating dirty rice. White rice with green peppers and onions and ground beef. Usually mom would make a cream lettuce salad to go with it. I loved this! My taste buds have now changed and I have no idea when I last had white rice and cream! I love you mom 🙂

This recipe is very simple. I started out cooking my long grain brown rice. While this was cooking, I chopped some green pepper and yellow onion.

Incase you were wondering what chopped green peppers and onions looked like…

I threw these into a pan with a little bit of olive oil. Once the veggies were cooked I added some vegetarian burger crumbles. After this was heated through I added the cooked rice to the veggies and crumbles. Stir to combine and it's ready!

Instead of a creamy salad, I cut up half of an avocado and put that beside my rice along with some cherry tomatoes. Nom! I just had to cut up some green onion and sprinkle on top. This made it!

I loved this meal! This will be a staple meal in our house from now on. The flavors are great and I loved grabbing a bit of avocado and tomato with my rice. I wish I had more to eat! You must try it!
