Veggies and a hot bath.

25 Nov

So bummed that it’s Sunday and we have to go back to work tomorrow. Boo for work. So, did you stuff yourself like crazy this Thanksgiving? I did! This was my first big holiday as a vegetarian. Not a big deal for me. I just ate  a ton of other food!

I started the day off with a 5K run. My hip has been bugging me lately so it was a slower run. I had to stop and walk a few times. I felt clumsy so I knew I wasn’t running “right”. Something must be out of whack.

We made caprese skewers to bring over to my grandparents for Thanksgiving. Every skewer I made I ate a tomato. They were so good! I bought them the Sunday before Thanksgiving and I worried they would be all wrinkly by then. I read somewhere that you shouldn’t put them in the fridge, so I thought I would try it. I never have any room in my fridge anyway. Let me say, this tip is right on! Stop putting your tomatoes in the fridge people! We put balsamic vinegar in the middle of our skewers.

skewers So good! All you need is some fresh basil, fresh mozzarella, and some cherry tomatoes. Oh my heavens. My cousin Lee Ann and I scarfed these down. I think some other people might have had a chance at some too…if they were lucky.

So I ate a thousand tomatoes, four hundred cucumbers, 80 carrots, and 28 black olives. I got my veggie fill in! I also pigged out on Lee Ann’s pumpkin pie chex mix. I should have taken a picture, so good and addicting. When the actual dinner started I just grabbed a tablespoon of mashed potatoes (I don’t like them. I just felt I should have some), some corn, coleslaw….and I ate half of my mom’s veggie tree. It was a good day!

Now that we got all of that Thanksgiving business out of the way…Christmas decorations have been put up! I put out a lot more this year. Maddox is getting older and HOPEFULLY he’ll be careful. So far so good! Here’s our pretty tree.

tree Today  I was scheduled to do my last workout for month 2 with Les Mills. Well, I woke up, sat up, and twisted wrong. Now it feels like there’s a monster under my shoulder blade eating away. I could barely get my contacts in. Tyrell rubbed it for a while and I made him stop because I was going to cry like a baby. So, I spent some time on the foam roller. Seemed to help a little bit. Tyrell suggested I go take a bath. I thought this would be the perfect time to try out that detox bath on Pinterest. I never take a bath. Too many toys to clear out and this just doesn’t seem like the peaceful haven it once was.

I didn’t play basketball or anything. I took advantage of the quiet time and just did NOTHING. Life sure changes when you have kids! Your bathroom and bathtub that used to have all kinds of soaps, lotions, and candles around it no longer exists. Oh well, I wouldn’t change it for the world.

Ultimate Reset: Day 21

19 May

My last day, day 21! I had a great night’s sleep. We even got to sleep in a bit. Felt good.
I just had an apple and a pear for breakfast this morning. Being the space cadet I am, I forgot to take a picture.

I had another giant salad for lunch.

Dinner was avocado and cucumber soup and roasted vegetables. The soup was OK. I couldn’t eat it all. It just wasn’t my cup of…soup. Budump bump. The veggies were great. How could they not be? If you ever have a bunch in your refeigerator and you don’t know what to do with them, chop them, drizzle with olive oil, spice them up to your liking, and place in oven. Ta da!

This 3 week journey is sadly over. I am a weirdo and I like to have my days planned and written down for me. This was a very strict three weeks. I enjoyed it very much. It was not difficult, I never cheated, and I never wanted to quit.

Do you know how much better I feel? I can’t even describe this to you. I have been eating a plant based (Vegan) diet for three weeks. I feel like my insides are shining, sparkly clean, and happy. You are what you eat! So very true. You eat crap, you feel like crap.

I have learned so much. How to cook food I have never tried before and new ways to cook the food I love. I appreciate the colorful fruits and vegetables so much more. I never felt like I was missing out on anything. I loved eating all of this food. I mean, there was a ton of food!

Now, don’t think that tomorrow my first meal is going to be bacon and eggs, some pizza for lunch, etc. That doesn’t even sound good. I have to slowly incorporate foods back into my diet. Such as dairy, eggs, and whole grains. This will be a great way to see how my body tolerates this food. If something that I consume doesn’t make me feel right I will cut it out of my diet completely. An easy process of elimination.

I lost 12 pounds during the Reset. I plan on doing my measurements tomorrow morning before I WORKOUT! I am so excited to get down there again. I will be starting month 3 of P90X 2 and running 3x per week.

Thank you so much for following me these past 3 weeks. Posting this every night was a great way for me to be accountable. If you have any questions, want a recipe, whatever…please ask! I am here to help! Want to know more about the Ultimate Reset? WWW.ultimatereset.com/lindsayelaine

Ultimate Reset: Day 20

18 May

Day 20! One more day to go! I am not excited that this journey is just about over. I have to say I am very proud of myself. This took a ton of commitment and learning, but I am so much better off now. I will go into that more tomorrow. WARNING Speech coming soon.
I started off the day with a pear, peach, and an orange. After I was half way through scarfing it down, I realized I forgot to snap a picture. Oops.

Lunch was a BIG salad. Mixed baby greens, tomatoes, sprouts, cucumbers, avocado, red pepper, and some red onion.

Dinner was a whole bunch of veggies sauteed in coconut oil and brown rice.
One of my favorites.

So, it’s Friday and I plan to go to bed early and sleep in a bit. Maybe fall asleep to Golden Girls. Sounds perfect. I am such a loser.

Ultimate Reset: Day 19

17 May

2 more days!
I loved my breakfast this morning. A peach, pear, kiwi, and an orange. I am THE breakfast girl and I give this one two thumbs up. I highly recommend starting your day off with a big plate of fruit. God didn’t give us some sugary, processed cereal. He gave us beautiful fruit, so eat it!

Lunch was a gigantic spinach salad topped with avocado, red peppers, tomatoes, and cucumbers. So good. What are your favorite salad toppings?

Dinner was quickly thrown together. I cooked up some tempeh, steamed some spinach, threw some tomatoes on my plate, and sliced up some avocado. Quick, easy, healthy, and delicious.

My challenge group begins Monday, so if you want in, then speak up now!

Ultimate Reset: Day 18

16 May

It is day 18. Time has certainly flown by. Breakfast was an orange and a granny smith apple. I am so grateful we have a granny smith apple tree right in our backyard. Come on fall!

Lunch was delicious. A spinach salad with tomatoes, avocado, and jicama.

Dinner was some veggies and rice. How do you cook your veggies? I love frying them in coconut oil. Try it!

I have learned so much and I want to share everything with you. I want you to feel as good as I do. I want you to appreciate your food. I will be starting a challenge group soon. It will be focused on clean eating and working out. If you are interested, please contact me either here or on my Facebook by tonight. You have nothing to lose but some inches and bad habits! Start now!

Ultimate Reset: Day 17

15 May

Day 17! Holy cow! I feel like I have all of my energy back. You know how I start my day by now. With a fresh fruit plate of course!

Lunch was rather strange. My least favorite so far. Moroccan carrot salad on top of baby greens. I wasn’t too crazy about the flavor, but I ate it anyway.

Dinner was super yummy! I had tempeh, corn and edamame succotash, and steamed asparagus.

I have been doing great these past few weeks. I have not cheated, much less craved anything besides chocolate Shakelogy (just ordered a new bag yesterday) Want some? I will hook you up. But, if i see that dang Dairy Queen commercial with the new confetti cake blizzard, I may cry a little.

Ultimate Reset: Day 16

14 May

Monday, Monday. Day 16 already. My breakfast was amazing this morning. Cantaloupe and kiwi. The cantaloupe was just perfect. Mmmm

Lunch was…you guessed it! Another microgreen salad. Am I sick of these? Nope!

Dinner was something new. Roasted cauliflower, steamed spinach, and brown rice. Oh my, this meal was super good. The recipe called for cury, but I chopped up some garlic and squeezed some fresh lemon on top instead.

Good day today! Total weightloss so far is 10.5 pounds. I am already thinking about Sunday, when I am done with the Reset, I can’t wait to start my third month of P90X2 and have a big old chocolate Shakeology shake! I miss that the most.

It’s getting warmer out there! Are you ready for your summer wardrobe? As a Beachbody coach, I have had the honor of helping people set and reach their fitness goals. I have been thinking of starting another challenge group. We would focus on clean eating and daily workouts. We would set up a private facebook group and I will provide motivation and guidance. So, if you are ready to learn, workout, and change habits then this challenge is for you! If you are interested, please visit my facebook and send me a message. I will be waiting to hear from you. Have a great evening!

Ultimate Reset: Day 15

13 May

First day of phase 3. This phase is called Restore. Here is what Beachbody says:
During this final phase, you’ll adjust your diet once again. You’ll be cutting back further on grains and consuming mainly fruits and vegetables—for fiber and further alkalinization, and to provide your body with pure, whole foods that are of high nutritional value and are easily absorbed. Right now, that may sound tough . . . but once you’ve tuned up your body, the food you do eat will satisfy you more (you’ll find that fruit literally tastes like candy to you!)

You’ll also be introduced to your final supplement— called Revitalize—during this phase, which will restore healthy bacteria to your freshly scrubbed digestive tract (this is very important, and often neglected in cleanse programs).*

Big breakfast today. A gigantic orange, blueberries, and a peach.

Lunch was an Asian Cabbage Salad. Was too big for me. I couldn’t eat it all. I know, shocking.

Dinner was garlic veggies and brown rice.

I got a little walk in today. My little guy and I went visiting. He got to mess up two more living rooms today.

Happy Mother’s Day! Mother’s have the toughest job in the world. They deserve extra special love and attention today. I wouldn’t be the person I am if it was not for my mother. She’s not only my mom, she is my best friend. I love her to the moon and back.

Ultimate Reset: Day 14

12 May

Last day of week 2! No more stinkin’ detox!!! I can not begin to tell you how happy that makes me.
I have all of my groceries bought for this coming week. So, my fruit plate this morning was extra delicious. A green apple, pear, peach, and some blueberries.

We had to go to a wedding today, so that meant planning ahead more. I made a double batch of roasted root vegetables (onions, beets, and carrots), edamame and roasted corn succotash, and quinoa. My favorite meal yet. I love, love, loved it. What made it even better was I ate my lunch while watching Singin in the Rain. I have a crush on Gene Kelly. He’s so dreamy…

Oh yeah, here’s my food…

Look at all the colors in that meal!

Dinner was the same as lunch. I just heated it up, scarfed it down, then watched everyone else eat at the wedding supper. Didn’t bother me one bit. Even with all those cupcakes. My sweet tooth was well behaved.

I have lost 8.5 pounds so far. I have gained a much greater appreciation for real food. I love planning what I will be having a week ahead. I enjoy chopping and prepping my meals. I enjoy the feeling real food gives me. I am so glad I am doing this. This has been life changing for sure.

Ultimate Reset: Day 13

11 May

Day 13! Today started off with an usual breakfast. Chickpeas, avocado, kiwi, and grapes. I was actually craving this. Weird. It was tasty.

Lunch was simple. Just another microgreen salad. I don’t put any dressing on my salads. I let the veggies do the talkin’.

Dinner was late tonight. I was out of town and didn’t get home until later. I had a green apple on the way home to hold me over. It was a GOOD apple! Something new on the menu tonight (forgive me, I am so dang tired right now I can barely remember what it was called) squash with a tahini garlic filling, steamed spinach, and green beans. I really liked it. Super filling! First time I didn’t clean my plate.

Once that little man of mine falls asleep I am done for the day. I…am….pooped.
