Banana Bread Oatmeal

Did you see my post on Facebook this morning? My yummy Banana Bread Oatmeal? I made it ALL by myself and it turned out delicious!

1/2 cup oats (I used Bob’s Red Mill 5 Grain Rolled Hot Cereal)

1 cup Almond Milk

1 teaspoon Nutmeg (to taste)

2 teaspoon cinnamon (to taste)

1 tablespoon vanilla

Banana

Mix all ingredients except for banana in small pot and heat until oats are cooked through. When it is to the consistency you prefer take off heat. Pour in bowl and cut up a banana and place on top. Enjoy!

I ran this morning before work. After I run I ALWAYS have Shakeology. It’s important to replace lost minerals and nutrients. It also re-energizes and reduces muscle soreness. There are so many more reasons why I still drink this every day. I could go on and on. Want me to? Later? Ok.

Anyways, about an hour after I drink my shake I make my breakfast and it’s usually oatmeal. Peanut butter oatmeal is one of my favorites, but I decided I was in a banana bread mood. Hence, the new recipe.

About once or twice a week my husband and I do our own things for dinner. That’s when I make something I know I love and he doesn’t. Then I can eat it all! I found a zucchini (a huge zucchini) sitting in my garden today. I decided to chop it up and just roast it with a bunch of other root veggies like beets, carrots, and onions. I doubled the batch so I can I have left overs tomorrow. I made some quinoa to go along with it. They pair nicely.

Tomorrow is my Friday. Tyrell informed me that he hates when people say that. He’s just jealous. I’m getting excited for the weekend. It’s our class reunion (10 years). We had such a small class, only 13 of us, so it will be fun to see and visit with everyone. I better start looking for something to wear now…

I’m sure everyone was in a huge panic when they realized I hadn’t updated this as I usually do on Mondays. 🙂 Right? I was quite busy. I was at the hospital all day with my little man. He had to have another outpatient surgery, sort of unexpected. So, for the fifth time I had to leave my favorite person in the whole world in the OR and just sit and wait. We will hopefully get to the bottom of this very soon. So please say a prayer for him. Very rough on mommy and daddy too. He is such a brave little guy though and I’m grateful for that, it just makes it a little easier to deal with. I love that little goober.

Feeling very emotionally and physically exhausted from the past couple of days, so I am glad it’s my rest/recovery week. I went for a run on Sunday and that felt really good. My treadmill should be here on Tuesday, very excited for that! I only have a few weeks left on my interval training and then I will begin seriously training for the half. I am going to be following Hal Higdon’s training program, so I will be in good hands.

Next Monday, April 30th, I will be starting the Beachbody Ultimate Reset.

I feel like this is just what I need right now. Sometimes, I have some some unhealthy food cravings like sugar or bad carbs and I would really like to break that. The recipes look so yummy. It will also be nice to learn some new habits and tips. I will keep you updated on my progress as this will not be easy every day. Support and accountability will get me through. Alot of Beachbody coaches are doing video updates everyday, but I’m not sure if you want to actually hear me rambling every day. Do you have plans this Saturday? Well, now you do. 1st Annual Diva for a Day Event at the Hebron City Hall. 10:30 am-6:00 pm central. There are going to be a ton of vendors there. I will also have a table set up for Wildtree, so come stop by, and say hi!Image
