Vegan Planet Recipe #2 Not-So-Dirty-Rice

It’s Thursday! That means it’s time to eat something new! I found a recipe last night that I just had to try. We grew up eating dirty rice. White rice with green peppers and onions and ground beef. Usually mom would make a cream lettuce salad to go with it. I loved this! My taste buds have now changed and I have no idea when I last had white rice and cream! I love you mom 🙂

This recipe is very simple. I started out cooking my long grain brown rice. While this was cooking, I chopped some green pepper and yellow onion.

Incase you were wondering what chopped green peppers and onions looked like…

I threw these into a pan with a little bit of olive oil. Once the veggies were cooked I added some vegetarian burger crumbles. After this was heated through I added the cooked rice to the veggies and crumbles. Stir to combine and it's ready!

Instead of a creamy salad, I cut up half of an avocado and put that beside my rice along with some cherry tomatoes. Nom! I just had to cut up some green onion and sprinkle on top. This made it!

I loved this meal! This will be a staple meal in our house from now on. The flavors are great and I loved grabbing a bit of avocado and tomato with my rice. I wish I had more to eat! You must try it!

Vegan Planet Recipe #1 Grilled Veggie Wrap

Every Thursday I will be cooking from the cookbook Vegan Planet. I do not eat strictly Vegan. I don’t eat meat, but I do enjoy eating eggs, yogurt, etc. I thought it would be a fun project and it’s always nice to get some new ideas for meal time. I took alot of pictures for this with my new camera.  Let me just say my new camera is a piece of crap! I think that my son’s toy camera could take better pictures. So, I apologize. I thought I could get by with a cheapo. Doesn’t look like it!

 

OK, so the first recipe is a Grilled Veggie Wrap. How can you go wrong with that? We actually make these all of the time and I thought I would start out with something familiar.

Gather the ingredients:

Zucchini

Red onion

Red pepper

Mushrooms

Wrap of your choice

Chop ‘em up!
I know it says grilled, but it was super windy today, and I’m not going to make my husband go out and grill for me. Cause I sure as heck won’t! I sautéed the veggies in a little bit of extra virgin olive oil.

When the veggies were done I had Tyrell make up the wraps because I pretty much stink at doing it. I always end up ripping them. I heated the wraps up for a minute in the oven to make them a little more flexible.

I also steamed some asparagus to add a little crunch to my meal.  And I put a couple of tablespoons of my homemade salsa in my wrap too.

What is that? Ketchup? NO! It’s sriracha!

This was a very lovely little meal. I felt good after eating it. When you got out to eat and order a wrap it’s full of cheese, ranch or sour cream, deep fried meat, and a side of fries. And how do you feel after that? Cruddy? Hmm. Maybe it is true. You are what you eat!
